Ingredients
  

  • 1 lb Chicken thighs, boneless skinless
  • 6 cups of Baby Kale
  • 1 lb Baby Yukon gold potatoes
  • 4 cloves of Garlic
  • 1 Lemon, Large
  • 1 tbsp of tarragon, fresh
  • Half cup of Chicken broth, low-sodium
  • Half tsp of Pepper, ground
  • Half tsp of Salt, divided
  • 3 tbsp Olive oil, extra-virgin

Instructions
 

  • Start your cooking with easy tasks such as first preheating the oven to 400°F and collecting all the required ingredients. 
  • The next step is to take one tablespoon of oil in a large cast-iron skillet and heat it over medium-high heat.  
  • Now, place pieces of chicken meat in the skillet and sprinkle them with 1/4 teaspoon of each salt and pepper.
  • Cook the chicken on medium-high heat until they brown on both sides for 5 minutes. After cooking them for five minutes, transfer them to a plate. 
  • Now it's the potatoes' turn. Take a pan and add the remaining two tablespoons of oil, the required potatoes, and the remaining one-fourth teaspoon of each salt and pepper. Keep the cut-side-down potatoes on the heat for three minutes, and cook them until browned.
  • Next, add low-sodium chicken broth, lemon, garlic, and tarragon. Transfer the chicken from the plate back to the pan.

Baking

  • Put the pan in the oven and let them roast for 15 minutes. Fifteen minutes later, the chicken is cooked through, and the potatoes are tender, so now, add the required kale into the mixture and bake it for another 3 to 4 minutes.
