  • 2 teaspoons Extra virgin olive oil

  • one 8-oz Ball burrata
  • 1 cup Microgreens
  • 2 tablespoons Pumpkin seeds
  • Balsamic vinegar

Instructions
 

  • Preheat your oven to a temperature of 400°F.
  • Keep the butternut squash in a medium sized bowl.
  • The next step is to drizzle with extra virgin olive oil.
  • Once you are done with the drizzling part, sprinkle it with salt and pepper. Make sure that you toss to coat.
  • Spread out in one layer on a lined baking sheet. For about 30 to 35 minutes, roast the butternut squash, flipping squash halfway through.
  • When it is fork-tender and appears light brown in some areas, it is an indication that the squash is ready.
  • Toasting the bread is the next step.
  • Cut the bread slices into half and keep them on a large platter with burrata and butternut squash.
