- Tennis biscuits – 250g
- Melted butter – 125g
- Superior cream cheese (softened) – 500g
- Caster sugar – ¾ cup
- Sour cream – ¾ cup
- Vanilla extract – 1 teaspoon
- Finely grated lemon rind – 1 teaspoon
- Eggs – 3
- Mixed frozen berries – 300 mg
- Sugar – 125 ml
- Lemon juice to tasteÂ

Instructions to cook
- Preheat the oven to 160°C.
- Blend the biscuits thoroughly and mix them until they become like breadcrumbs.
- Add melted butter and mix it thoroughly to get well combined.
- Press the mixture onto the base and sides of the prepared tin and refrigerate it for 30 minutes.
- Mix the cream cheese, sour cream, vanilla extract, sugar, and lemon rind, and make it a paste of smooth consistency.
- Add in the eggs little by little and beat them perfectly.
The mixture is to be poured into the prepared tin and it should be baked for 50 minutes – 1 hour. (you should know it’s done and set when the center starts to wobble). It should be allowed to cool in the oven for 2 hours.
The berries and sugar are to be heated and brought to a boil in a medium saucepan. Cook it till it becomes slightly thickened. Then allow it to cool, and add in sugar if necessary.
Pour the berry compote on top of the cheesecake just before it is served.
